Simple, Yet Delicious
When the heat gets turned up to 11, and it looks like there is no end in sight, it might be a good idea to cool down with the crisp and refreshing Bellini, a light drink with a sparking wine base, laced with peach puree. Simple, yet delicious!
Peachy Keen
The original recipe was created sometime between 1934 and 1948 by Giuseppe Cipriani at Harry’s Bar in Venice, Italy. Harry’s Bar was a famous haunt for Ernest Hemingway, Orson Welles, and numerous other modern celebrities. The original recipe calls simply for white peach (puree) and an Italian sparkling wine called Prosecco. If you can find it, it is recommended that you use it.
Little Known Fact
The name Bellini came from Cipriani, who was inspired by the color of a toga, worn by a saint in a painting by 15th-century Venetian artist Giovanni Bellini.

Recipe
Ingredients:
+ 1 medium ripe Peach, peeled and pureed
+ 4-6 oz Italian dry Sparkling white wine or Champagne
Mixing instructions:
Pour peach puree into glass and slowly add champagne. Stir gently. Garnish with a peach slice.
*In the original recipe, created around 1940 in Harry’s Bar in Venice, white peaches and Italian sparkling wine, Prosecco, should be used. If you can find them use them, if not, regular peaches and champagne will do.
